How do I start over the game?

Does anybody has idea how to start over the game from iphone? I deleted app in both iphone and icloud storage, then re-installed it but it loaded my old profile data.

I then log out game center and Apple ID, login with a new Apple ID then installed the game but I got the same profile. Looks like the app remember the device(iphone).

I appreciate if you have any idea to start a new game.
